The phrase “Tex-Mex” did not originally apply to food, but was an abbreviation for the Texas-Mexican Railway. Originally servicing a small stretch of the Texas Gulf Coast, the line expanded into Nuevo Laredo, Mexico in the 1880s.

Chili peppers play a huge role in Mexican food, having made their first appearance around 7000 BC in Mexico. Christopher Columbus was the first European to "discover" chili pepper in 1493, and he named it "pimento," the Spanish word for "pepper."

Mexican cuisine is just as complex as other ancient cuisines such as those of China and Japan. The techniques and skills to create the cuisines developed over thousands of years of history.

In this day and age, most Mexicans believe that their national identity would be at a loss without chili and the many variety of sauces and salsas created using chili as their base.

While Mexican fare can indeed be spicy, there are many offerings that are friendlier to people who aren't fond of spicy dishes. For instance, many grilled meats, soups and bean dishes are free of spiciness but are no less authentic.

Though pozole is usually a meat-based stew, vegetarian and vegan versions also exist. After colonization by the Spaniards, the ingredients of pzole changed, but the staple corn remained. Pozole is served in Mexican restaurants around the world.

Mexican chefs traditionally used a tortilla press to cook tortillas without the use of oil. This consists of two plates of metal or wood, which are hinged together, and the ball of dough is flattened between the weighty plates to create perfect tortillas everytime.

Tortillas are a staple of Mexican cuisine. Corn tortillas are made from maize flour, and tend to be thick and hearty. Flour tortillas are made from wheat flour, and are generally larger and thinner.

There are a lot of dishes in Mexico that revolve around their sauces, including entomatada, adobo or adobados, pipians and moles. All these dishes have a very unique taste thanks to their sauces.
